5-minute Carrot Salad

Hey guys! So sorry for not posting anything recently. Life has been crazy with my NTC class finishing up, parents moving, and many other things.  I sadly haven’t even tried a new recipe in over a week. That is all about to change however. Finally have some recipes set up to try.

So this recipe is super easy. I recently harvested some carrots from my porch garden. They turned out all sorts of funny shapes!! I learned that I really need to space them out more next time. :)

This recipe is really about taste. You can add more or less oil, salt, pepper, or onion/parsley as you would like. Feel free to experiment. I made this as simple as possible to cater to anyone’s taste buds.

Ingredients:

  • 5-6 carrots (peeled)
  • 1 TBS Olive Oil
  • 2 TBS Coconut Oil
  • Salt and pepper to taste.
  • 1-2 TBS Fresh Green onion or parsleyphoto

Directions:

Grate Carrots. This can be done in a food processor or normal grater.

Place in large bowl and toss with the rest of the ingredients.

Taste as you go!

Note: Store in refrigerator. Serve cold or room temperature

That is it!! So easy! Carrots are a great thing to grow in your garden. They do not take any maintenance besides watering daily or every other day depending on how hot it is.
