Homemade Almond Larabars

Hey guys! During my trip to Las Vegas in March I was introduced to Larabars. I had seen them in the grocery, but assumed they had just as much junk in them as the rest. Man was I wrong! Due to the allergies I have, I usually try to find items of food with minimal ingredients and Larabars definitely fit into that category! The only downside is they are expensive for how small they are. However, on my search for a dessert to make for a Women’s Tea Party, I found Chocolate Covered Katie’s website and fell in love! She has fantastic recipes for healthy desserts. In her blog I found homemade Larabars and had to try them! I adapted the recipe since I didn’t have all the ingredients on hand and it turned out perfect! Now I made a MASSIVE batch because I needed it for 60 people so I will use the ratios Katie has.

Here’s what I did


  • 1 cup pitted dates (80g). (she recommended Sunmaid, but I just used an organic brand)
  • 1/4 cup Almonds (toasted… instructions below)
  • 1/3 cup peanuts (toasted)
  • tiny pinch of salt
  • 1/4 tsp vanilla
  • Carob Sauce (totally optional! doesn’t need it, but looks better for presentation)


Toast your nuts. I place them on a pan dry at 400 degrees for about 5-10 minutes or until toasted. Blend ingredients in a food processor. I suggest adding bits at a time. Lay out on a pan or cupcake liner.

That’s it!! So easy and fantastic and definitely cheaper than buying them. You can do so much with this recipe! Feel free to add your own ingredients or change out the nuts for something else.
