Pomegranate Ginger Drink/Tea

I decided today that I really wanted something besides water. I have been feeling pretty crummy from all the holiday eating and wanted something that was refreshing yet low cal/low sugar. This is what I came up with.

Ingredients:

  • Water (about 6 glasses full)
  • 1 pomegranate
  • 1 1/2 TBS ginger (FRESH)
  • 1 teaspoon lemon (optional)
  • Apron! (I definitely had a couple splatters on my shirt…red is hard to get out! :)

Directions: 

Boil a couple cups of water. (I boiled mine in sections…explain later) Cut your pomegranate in half and take out all the seeds into a bowl. If your messy like I am, try picking out the white chucks that come out with the seeds. Using a potato peeler, peel only the outside of your ginger you are using. (that way it can stay fresh for later) Cut your ginger into a 1 inch long piece. Ginger is very coarse so I simply broke it into peels with my hands. Add your pomegranate, ginger, and lemon to a pitcher. Add boiling water. Stir. let stand for about 10 minutes. Just like a tea.

To serve: use a strainer to strain the liquid out. Enjoy!!

Note: If you have a big pitcher than you can do about 12 cups at once. I couldn’t find my big pitcher so I used a smaller one and transferred the ready liquid to a couple glasses, boiled more water, and added it back to the mixture to repeat the process. You can see by the pictures how much it made. 2 glasses, 1 20 oz bottle, and the pitcher.

UPDATE!! If you put the pomegranate seeds into water they will separate and you can collect them easier that way.
