Winning Chili!

UPDATE: by the way there was 29 chili recipes in the running! 🙂

HELLO! Very excited to say that this chili won my Churches chili cook off for overall chili! This was the first time my husband and I entered a contest and were thrilled when it came out so well! SO, we decided it was best to share the recipe with all of you! I know that it looks like a TON of ingredients, but it really isn’t that bad. I promise. Here is what we did!!

Ingredients:  photo

  • 1/2 pound bacon (We used applegate farms bacon found at Publix)
  • 1 pound premium ground Kobe beef (We got this at Publix for about $6 a lb)
  • 1 pound ground pork
  • 1 green bell pepper, finely diced
  • 4 small yellow onions, finely diced
  • 4 jalapeno peppers, seeded and finely chopped
  • 4 habanero peppers, seeded and finely chopped
  • 1 tablespoon of tabasco sauce
  • 3 cloves garlic, minced
  • 1/2 tbsp of garlic powder
  • 1 1/2 tablespoons ground cumin
  • 1 – 2 tablespoon crushed red pepper flakes
  • 2 tablespoons chili powder
  • 2 tablespoons beef bouillon granules
  • 1 (28 ounce) can fire-roasted crushed tomatoes (We bought these at Publix pre fired)
  • 2 (16 ounce) cans whole peeled tomatoes, drained and cut into 1/2” pieces
  • 2 (16 ounce) cans chili beans, drained
  • 2-3 (12 fluid ounce) Yazoo Dos Perros beer
  • 6 ounces tomato paste
  • 2 ounce chile paste
  • 1/2 tablespoon of cinnamon
  • 1/2 tablespoon of curry
  • Sea salt to taste

Directions

Place bacon in a large soup pot. Cook over medium high heat until evenly brown. Drain excess grease into a bowl to use later, leaving enough to coat bottom of pot Remove bacon, drain on paper towels and chop into 1/2” pieces.

Lightly brown beef and pork in pot over medium high heat. When meat is lightly browned, stir in the bell pepper, onion, jalapeno peppers, habanero peppers, tabasco sauce, garlic, garlic powder, cumin, red pepper flakes, chili powder, bouillon, crushed tomatoes, cut whole tomatoes, 1 of the 2 beers, tomato paste, chile paste, cinnamon, salt to taste, bacon grease that was previously removed, and curry.

Reduce heat to low and simmer for 45 to 60 minutes, stirring occasionally. Add beans and bacon and continue simmering for another 30 minutes. If you prefer a thicker chili, remove some of the excess sauce that will rise to the top while boiling. Add second beer right before serving and before all of the “good stuff” can get cooked out.

    • Hey Kelly!
      While this recipe does have a lot of ingredients it is totally worth it! We have made it quite a few times and it is always everyone’s favorite. It does run on the spicy side so reduce the heat by adding less japelanos and habaneros. 🙂 It is also much better the second day once it has a chance to sit and rest.
