It has officially been a month since my last post. I can honestly say that life has just been a bit too crazy. I decided to give myself the whole month to refocus. The first thing I’d like to talk about, now that I’m back, is zucchini. I have always had an issue with zucchini because while it may be tasteful, it can be so watery. Here is a great way to try it out that I have really enjoyed
put your oven on broil
place on a pan lined with foil
Drizzle olive oil over top lightly!
then simply sprinkle with cayanne, tiny bit of salt, and Mrs. Dash
Place in oven for 5-10 minutes, take out and sprinkle with parmesan cheese.
Leave in oven for another couple minutes until browned.
Note: I like to cook mine a little less so that the texture of the zucchini doesn’t get too mushy.
